Ingredients
- 600g mutton
- 2 cups seeraga samba rice, soaked
- 3 tbsp Manakkadu Biriyani Masala
- 2 onions, sliced
- 2 tomatoes
- ¼ cup curd
- 2 tbsp ginger-garlic paste
- 4-5 dried red chillies (Ambur style), made to paste
- ½ cup mint + coriander
- 3 tbsp oil + 2 tbsp ghee
- Whole spices
- Salt and 3.5 cups stock
Method
Step 1: Pressure cook mutton
Cook mutton with a little salt, turmeric and ginger-garlic paste until just tender; reserve the stock.
Step 2: Saute base
Heat oil and ghee, add whole spices and onions; saute golden.
Step 3: Add pastes
Add red chilli paste, remaining ginger-garlic paste and tomatoes; cook till oil separates.
Step 4: Add masala & curd
Add Manakkadu Biriyani Masala, curd, mint and coriander; cook 5 minutes.
Step 5: Combine
Add cooked mutton and reserved stock; bring to a boil and check salt.
Step 6: Add rice & dum
Add drained rice, adjust water to 1:1.25, boil then cook on dum 18-20 minutes. Rest and fluff.
