Ingredients
- 6 small brinjals, slit
- 1 lemon-sized tamarind, extracted
- 1 tbsp sambar powder
- 1 tsp Manakkadu Garam Masala
- 10 shallots
- 2 tomatoes
- ½ tsp fenugreek seeds
- ½ tsp mustard seeds
- 1 sprig curry leaves
- 3 tbsp gingelly oil
- Salt and turmeric
- Pinch of jaggery
Method
Step 1: Temper
Heat gingelly oil, splutter mustard and fenugreek; add curry leaves.
Step 2: Saute
Add shallots and brinjals; saute 4-5 minutes till brinjals soften slightly.
Step 3: Add tomato & spice
Add tomatoes, sambar powder, turmeric and salt; cook till oil separates.
Step 4: Boil
Add tamarind extract and simmer 12-15 minutes until brinjals are soft and gravy thickens.
Step 5: Finish
Stir in Manakkadu Garam Masala and a pinch of jaggery; simmer 2 minutes.
