Arachuvitta Sambar (Fresh Ground Sambar) Recipe

Ingredients
- 1 cup toor dal, cooked
- 2 tbsp Manakkadu Sambar Powder
- Mixed vegetables (drumstick, brinjal, pumpkin, carrot)
- 1 lemon-sized tamarind, extracted
- 2 tbsp grated coconut
- 1 tsp rice (for grinding)
- 2 dried red chillies
- 1 tsp coriander seeds
- 1 onion, chopped
- ½ tsp mustard seeds
- 1 sprig curry leaves
- 2 tbsp oil
- Salt and a pinch of asafoetida
Method
Step 1: Grind the paste
Roast coconut, rice, red chillies and coriander seeds in a little oil; grind to a smooth paste.
Step 2: Cook vegetables
Boil vegetables in tamarind water with turmeric and salt until tender.
Step 3: Add dal & powder
Add cooked toor dal and Manakkadu Sambar Powder; simmer 5 minutes.
Step 4: Add ground paste
Stir in the fresh coconut paste and simmer 8-10 minutes until thick and aromatic.
Step 5: Temper
Heat oil, splutter mustard, add curry leaves and asafoetida; pour over the sambar.
