Authentic Chettinad Chicken Varuval with Manakkadu Masala Chicken Masala
Chettinad Chicken Varuval is a spicy and flavorful South Indian chicken fry known for its rich aroma and bold taste. Using Manakkadu Masala Chicken Masala makes this recipe easy while preserving the authentic Chettinad flavor.
Ingredients
- 500 g chicken, cleaned and cut into pieces
- 2 tbsp Manakkadu Masala Chicken Masala
- 1 tsp Manakkadu Masala Red Chilli Powder
- ¼ tsp turmeric powder
- 1 tsp black pepper powder
- 2 onions, finely chopped
- 2 tomatoes, finely chopped
- 1 tbsp ginger-garlic paste
- 2 tbsp cooking oil
- Curry leaves
- Salt to taste
- Fresh coriander leaves for garnish
Preparation Method
Step 1: Marinate the Chicken
In a bowl, combine chicken with:
- 1 tbsp Manakkadu Masala Chicken Masala
- ½ tsp Manakkadu Masala Red Chilli Powder
- Turmeric powder
- Salt
Mix well and marinate for 30 minutes.
Step 2: Prepare the Masala Base
Heat oil in a pan. Add curry leaves and chopped onions. Sauté until golden brown.
Add ginger-garlic paste and cook until the raw smell disappears.
Add tomatoes and cook until soft and mushy.
Step 3: Cook the Chicken
Add the marinated chicken and stir well.
Add:
- Remaining 1 tbsp Manakkadu Masala Chicken Masala
- Remaining ½ tsp Manakkadu Masala Red Chilli Powder
- Black pepper powder
Mix thoroughly so the chicken is coated evenly.
Cook on medium flame until the chicken releases moisture and becomes tender.
Step 4: Make it a Varuval
Cook uncovered and stir occasionally until the masala thickens and coats the chicken pieces.
Roast for a few minutes until the chicken develops a rich Chettinad-style texture.
Garnish with fresh coriander leaves and serve hot.
