Ingredients
- Mixed vegetables (carrot, beans, potato, peas), chopped
- 1 tsp Manakkadu Garam Masala
- ½ cup grated coconut
- 2 green chillies
- 1 tbsp roasted gram (pottukadalai)
- 1 tsp fennel seeds
- 2 onions, chopped
- 1 tomato, chopped
- 1 tbsp ginger-garlic paste
- 1 sprig curry leaves
- 2 tbsp oil
- Salt and turmeric
Method
Step 1: Grind paste
Grind coconut, roasted gram, green chillies and fennel into a smooth paste.
Step 2: Saute
Heat oil, add curry leaves and onions; saute. Add ginger-garlic paste and tomato; cook soft.
Step 3: Cook veg
Add vegetables, turmeric, salt and a cup of water; cook till tender.
Step 4: Add paste
Stir in the coconut paste and simmer 8-10 minutes till creamy.
Step 5: Finish
Add 1 tsp Manakkadu Garam Masala, simmer 2 minutes and switch off.
