Ingredients
- 1 lemon-sized tamarind, extracted
- Vegetables (brinjal, drumstick or shallots)
- 1 tbsp sambar powder
- 1 tsp Manakkadu Garam Masala
- 2 onions / 10 shallots
- 2 tomatoes
- ½ tsp fenugreek seeds
- ½ tsp mustard seeds
- 1 sprig curry leaves
- 3 tbsp gingelly oil
- Salt and turmeric
Method
Step 1: Temper
Heat gingelly oil, splutter mustard and fenugreek; add curry leaves.
Step 2: Saute
Add shallots/onions and saute golden; add tomatoes and cook soft.
Step 3: Spice base
Add sambar powder, turmeric and salt; saute briefly.
Step 4: Add tamarind
Pour tamarind extract, add vegetables and boil 12-15 minutes till oil floats.
Step 5: Finish
Stir in 1 tsp Manakkadu Garam Masala, simmer 2 minutes and switch off.
