Ingredients

  • 500g fish (seer/vanjaram/sankara), cleaned
  • 3 tbsp Manakkadu Fish Curry Masala
  • 1 lemon-sized tamarind, soaked in 1 cup water
  • 2 onions, finely chopped
  • 2 tomatoes, chopped
  • 8 shallots (small onions)
  • 1 tbsp ginger-garlic paste
  • 1 sprig curry leaves
  • 3 tbsp gingelly (sesame) oil
  • ½ tsp fenugreek seeds
  • ½ tsp mustard seeds
  • Salt to taste
  • 2 cups water

Method

Step 1: Temper the oil

Heat gingelly oil in a clay pot or kadai. Add mustard and fenugreek seeds, then curry leaves.

Step 2: Saute aromatics

Add onions and shallots; saute until golden. Add ginger-garlic paste and cook till raw smell goes.

Step 3: Add tomatoes & masala

Add tomatoes and cook till soft. Add 3 tbsp Manakkadu Fish Curry Masala and salt; saute for a minute.

Step 4: Add tamarind water

Pour in tamarind extract and 1 cup water. Boil for 8-10 minutes until oil separates.

Step 5: Add fish

Gently slide in fish pieces. Do not stir hard. Simmer for 10-12 minutes until cooked.

Step 6: Rest

Switch off and let it rest for 30 minutes — kuzhambu tastes best the next day.
