Milagu Rasam (Pepper Rasam) Recipe

Ingredients
- 1 lemon-sized tamarind, extracted in 2 cups water
- 2 tsp Manakkadu Rasam Powder
- 1 tsp black pepper, crushed
- 1 tsp cumin seeds, crushed
- 2 tomatoes, mashed
- 3 garlic cloves, crushed
- ¼ cup cooked toor dal water (optional)
- ½ tsp mustard seeds
- 1 sprig curry leaves
- 1 tbsp ghee
- Salt, turmeric and a pinch of asafoetida
- Coriander to garnish
Method
Step 1: Prepare base
Mix tamarind water, mashed tomato, Manakkadu Rasam Powder, crushed pepper-cumin, turmeric and salt in a pot.
Step 2: Boil
Heat until it froths and just begins to boil — do not over-boil rasam.
Step 3: Add dal water
Add dal water (for a softer rasam) and switch off as it froths up.
Step 4: Temper
Heat ghee, splutter mustard, add garlic, curry leaves and asafoetida; pour in.
Step 5: Garnish
Finish with coriander and cover to keep the aroma in.
Serving Suggestions
Serve hot with:
