Ingredients
- 4 boiled eggs, halved or whole
- 2 tbsp Manakkadu Egg Kuruma Masala
- 2 onions, finely chopped
- 1 tomato, chopped
- 1 tsp ginger-garlic paste
- ½ tsp turmeric powder
- 1 sprig curry leaves
- 2 tbsp oil
- Salt to taste
Method
Step 1: Prep eggs
Boil and peel eggs. Make light slits or shallow-fry whole with a pinch of turmeric and salt.
Step 2: Saute base
Heat oil, add curry leaves and onions; saute golden. Add ginger-garlic paste.
Step 3: Add tomato & masala
Add tomato, cook soft. Add Manakkadu Egg Kuruma Masala, turmeric and salt; cook till oil separates.
Step 4: Add eggs
Add the eggs and a tablespoon of water; gently toss to coat in masala.
Step 5: Roast
Cook on low 5 minutes till the masala clings and turns into a dry roast.
Serving Suggestions
Serve hot with:
