Ingredients
- 500g chicken
- 2 cups seeraga samba rice, soaked
- 3 tbsp Manakkadu Biriyani Masala
- 2 onions, sliced
- 2 tomatoes, chopped
- ¼ cup curd
- 2 tbsp ginger-garlic paste
- 2 green chillies
- ½ cup mint leaves
- ½ cup coriander leaves
- 3 tbsp oil + 2 tbsp ghee
- Whole spices (bay leaf, cinnamon, cloves)
- Salt and 3.5 cups water/stock
Method
Step 1: Marinate
Marinate chicken with curd, 1.5 tbsp Manakkadu Biriyani Masala, salt and a little ginger-garlic paste for 30 minutes.
Step 2: Saute
Heat oil and ghee, add whole spices and onions; saute golden. Add remaining ginger-garlic paste and green chillies.
Step 3: Build masala
Add tomatoes, mint, coriander and the rest of the biriyani masala; cook till oil separates.
Step 4: Cook chicken
Add marinated chicken and cook 8-10 minutes.
Step 5: Add rice
Add drained seeraga samba rice, water/stock and salt; bring to a boil.
Step 6: Dum
Cover and cook on very low flame 15-18 minutes. Rest 10 minutes, then fluff gently.
